Oysters are very sharp and are called nature’s razor blades. One oyster filters 50 gallons of water daily and are the most important living thing to the ecosystem of our waterways. They cluster together and the “junk” on the cluster needs to be whacked off and returned to the water for future growth. All shells need to be recycled and returned to the water for baby oysters cement themselves to dead shells. So whether you attend one of the many Oyster Roasts around town or go and get your own, these little oysters are a part of life for residents of the low country as well as essential to the health of our waterways!
